When you need a classic, comfort dish with minimal ingredients (you probably already have them on hand!), you can never go wrong with Cacio E Pepe. Translation: "cheese and pepper" in Italian. It's basically grown-up mac n cheese - but completely gluten-free!
1 package Taste Republic gluten-free linguini
3 tbsp. unsalted butter, cubed
1 tsp freshly cracked black pepper
¾ cup finely grated parmesan
⅓ cup finely grated pecorino
Kosher salt to taste
Cook pasta according to package instructions, setting aside ¾ cup pasta water. Drain and set aside.
Melt 2 tbsp butter in a skillet over medium heat and add pepper.
Add pasta water to skillet and bring to a boil. Toss in the rest of the remaining butter and linguini. Reduce heat and add parmesan.
Remove from heat and add pecorino. Adjust taste as needed with salt. Serve warm and enjoy!
