When you need a quick side dish or light meal option, this gluten-free tortelloni salad is just the ticket. Cheese-filled pasta makes it heartier than your average pasta salad, and it's easy to customize by throwing in your favorite veggies.
1 package Taste Republic Four Cheese Tortelloni
2 cups baby spinach
1 cup chopped grape tomatoes
1/4 cup chopped basil
1/4 cup chopped red onion
1/4 cup shredded mozzarella
Juice of one lemon
Drizzle of olive oil (optional)
2 cloves minced garlic
1/4 tsp oregano, salt, and pepper
Cook pasta according to package instructions and set aside. Chop all veggies and garlic. Place spinach in bowl, then toss in veggies and tortelloni. Give it a good mix. Dress with lemon juice, oil, and spices and enjoy!
