1 package of Taste Republic Gluten-Free Red Lentil Fusilli
1/4 cup olive oil
1 tbsp red wine vinegar
1 tsp Italian seasoning
1/4 - 1/2 tsp garlic powder
1/2 tsp salt
dash of red pepper flakes
1/3 cup toasted pine nuts; in toaster or cook in a pan on low with spray oil until fragrant
large handful of arugula
Optional toppings: sun-dried tomatoes, marinated artichokes, chopped turkey pepperoni.
Mix the oil, vinegar, and seasonings in a small bowl to make the dressing. Cook the pasta according to package, drain, mix with the dressing, and add your toppings. Be sure to put a little of the marinated artichoke juices in as well. Let sit in the fridge for around 30 minutes so all of the flavors come together and enjoy! Keeps well in the fridge for about a week.
