Gluten Free Lasagna Soup

When you need some nearly instant comfort food favorite, this Gluten-Free Lasagna Soup will be one you come back to again and again. With all the delicious lasagna flavors and none of the layering fuss, no wonder it was one of the most googled recipes in 2023!

Gluten Free Lasagna Soup Ingredients

1 package Taste Republic Gluten Free Lasagna Sheets, broken into roughly bite-sized squares
1/2 tbsp olive oil
1 onion, diced
4 cloves garlic, minced
1 Ib ground turkey, beef or Italian sausage
1/2 tbsp tomato paste
1 tsp each of dried oregano, dried parsley, red chili flakes, salt & pepper
1 24 oz jar of tomato sauce
5 cups chicken broth
½ cup heavy cream
1 cup ricotta
1 cup grated cheddar or mozzarella
1/2 cup parmesan cheese

Gluten Free Lasagna Soup Instructions

Heat a large pot over medium-high heat. Add oil, onion, and garlic and sauté until softened. Add your ground meat and cook until browned.

Add tomato pasta and seasonings and allow to cook for 5 minutes.

Pour in tomato sauce, broth, and heavy cream and stir to combine. Let simmer over medium heat while you make the topping.

For the ricotta topping, stir ricotta and both grated cheeses together in a bowl.
