Paleo Linguini Carbonara

A rich creamy sauce, a hearty pasta base, and somehow it's also Paleo and packin' multiple servings of veggies?! This Paleo Linguini Carbonara is bringing the FIRE when it comes to a healthy, totally satisfying dinner. We have a feeling you're going to have this on repeat all winter long!

Ingredients

Taste Republic Cauliflower Linguini

Sauce:

½ C. raw cashews

1 small diced onion

2 T. olive oil

2 t. minced garlic

½ t. sea salt

Mix-ins:

2-3 C. steamed broccoli

2 scrambled eggs

½ package of pancetta or bacon (cut into pieces)


Directions:

Boil 1/2 cup raw cashews for about 15 minutes. Meanwhile, saute 1 small diced onion in 2 tbsp EVOO until translucent. Add 2 tsp minced garlic and cooked another minute. Blend together the cashews, 2/3 cup of the water the cashews were boiled in, onion, garlic, and 1/2 tsp sea salt until smooth.

Mix together the cooked Cauliflower Linguini, steamed broccoli, scrambled egg, pancetta or bacon, and the sauce. Devour this comfort meal!
