Nothing says summer like a caprese salad with perfectly ripe tomatoes and fresh mozz, and the addition of gluten-free pasta makes this one filling enough for a main dish or a heartier side. This one is bursting with flavors that are perfect for enjoying on the patio or at a cookout.
1 package Taste Republic Fusilli
A couple handfuls of arugula and romaine
10+ cherry tomatoes
10+ chopped pieces of mozzarella
3-4 tbsp balsamic dressing
2 tbsp toasted pine nuts
Cook and drain pasta according to package instructions and set aside.
Cut cherry tomatoes in half and chop mozzarella into bite sized pieces.
Toss all salad ingredients in a large bowl and add pasta. Serve cold and enjoy!
